Darin Andrew Eible

January 30, 1973 — June 21, 2021

Darin Andrew Eible, born in South Korea in 1973, joined the Eible family at 4 months of age. Parents Jay and Johanne, along with siblings Lisa, Karen, and Jill were thrilled to have a beautiful baby boy join the family. Raised in Lambertville and Princeton, NJ, Darin graduated from Princeton High School in 1991 and attended Johnson and Wales University with studies in culinary arts. A talented and creative chef, Darin earned the status of head chef in a variety of locations including Hull, Massachusetts, Viejas, Puerto Rico and Annapolis, Maryland, before launching and co-owning Wahoo Fire & Ice Grill in Manhattan, Kansas. His most recent appointment was as executive chef at Colbert Hills, also in Manhattan, Kansas.
Darin, married to Krista Eible in 2008, welcomed his pride and joy, son Parker Jae, to the family in 2012. Together they would spend countless hours constructing with legos, digging and planting in the garden, roaming the hills of golf courses, boating in the local waters, and, of course, inventing new dishes in the kitchen, adorned in matching chef coats..
Darin is survived by his wife Krista (Wertz) Eible and son Parker Eible (Manhattan, KS), mother Johanne Eible (Haddon Township, NJ) and sisters Lisa Eible (Haddonfield, NJ), Karen Eible (Camden, ME) and Jill Eible (West Grove PA). He is preceded in death by his father Jay Sully Eible and his brother Peter Jay Eible.
He will be missed every moment of every day.
A memorial service will be held in both Manhattan, Kansas and Chester, New Jersey (TBD). In lieu of flowers, donations can be made in his name to the First Tee- Manhattan(Providing kids and teens with tools to set goals, resolve conflicts, manage emotions and learn the game of golf) or, due to the sudden and unexpected loss of Darin, the Scleroderma Research Foundation.
